Greek Roast Leg of Lamb with Crispy Potatoes, Kalamata Olive Salsa and Whipped Chilli Feta 🍗🌶🫒

Tom’s mum Claire adores Greek food so it was only right that we pulled out all the stops for a Mother’s Day meal of her dreams.

And, look I don’t wanna blow my own trumpet, but this was an elite roast dinner 🥳

Here’s how I did it:

I roughly chopped 3 bell peppers, 1 large red onion, 1 courgette, 5 large closed cup mushrooms, 1 red chilli, 3 garlic cloves and a handful of kalamata olives. I placed them in a deep roasting dish with some on the vine tomatoes, a shake of garlic granules, fresh oregano, rosemary and a good glug of chilli oil (seeds included).

I whacked the leg of lamb on top of the veg before pouring lemon juice and grating zest onto the meat. I then cut slices of garlic and lemon and placed them over the top of the leg, before piercing it and stuffing the holes with rosemary and oregano.

Filling the tin a 3rd of the way with water, I tightly covered the dish with foil and popped it in the oven for 2 hours at around 170°.

After 2 hours, I took it out, pouring the juice into a saucepan. I put the leg and the veg back in the oven for another half hour with the heat cranked up to 190°, still covered with foil for the first 20 mins and then uncovered for the last 10 to get some good browning on the top.

With the leftover meat/veg juice, I heated it over a low heat, adding a chicken gravy pot to add a bit more meaty flavour.

For the roasties, we peeled them before par boiling them for 15 mins. I then roughed them up in a colander (the key to a good crunch) and coated them in olive oil and salt. I heated a tray with a glug of olive oil in the oven before placing the potatoes in one by one, along with sliced garlic cloves and rosemary. These went in the oven with no door opening for 50 mins.

We served this all on the table with a kalamata olive and caper salsa and a whipped chilli feta.

Ngl this was the best roast I’ve ever made and I urge you all to try it immediately
