I went downstairs to our empty cupboards to rustle something up for lunch, spotted some avos and suddenly remembered a post I’d saved from birkbites aaaages ago that I wanted to try!

This is a super easy lunch time pasta that was in my bowl within 12 mins🥑

And it tasted amaaaaazing😍 as a die hard guac fan, this fulfilled all of my avocado desires and will definitely enter the rotation of WFH lunches!

I made a few substitutions cos of empty fridge so I’ll post my version here but for the original, make sure to check out birkbites page 💚

Ingredients:
⭐️ Pasta (I used rigatoni)
⭐️ 2 Avocados
⭐️ 1 Lemon
⭐️ A handful of pine nuts
⭐️ A handful of rocket
⭐️ Tomatoes
⭐️Chilli Flakes
⭐️ 3 cloves of garlic

1. I whacked my pasta on and cooked it for 10 mins.
2. Pop the avocado, lemon zest, lemon juice, pine nuts, rocket and a splash of olive oil into a blender and blitz it until it forms a sauce.
3. Once your pasta is cooked, drain it (retaining some pasta water) and mix it thoroughly with your avocado sauce, adding pasta water if you want a saucier consistency.
4. Mix in the tomatoes and sprinkle with chilli flakes.
